Prawns with ginger and coconut curry 👌

Ingredients:
1/2 kilo of prawns
Minced garlic
Minced ginger
Chopped onion
Olive oil
Butter
Lemon juice
Salt and pepper
* Sauté onion, ginger and garlic. Add butter and cook prawns. Pour a tablespoon or 2 of lemon juice. Set aside.

Carrots (julienned)
Green peas
Salt and pepper
Paprika powder
Turmeric powder
* Cook vegetables with salt and pepper, turmeric and paprika. Set aside.

1 can coconut milk
2-3 tablespoons of red curry paste
2-3 tablespoons lime juice
*Stir and simmer, add more red curry if needed.

*Add cooked shrimp and vegetables into the curry sauce and serve with fresh coriander. 😊
